Smoked Potato Skins:

Looking to make something super delicious for this Super Bowl? Look no further. This is super simple and super easy. You can also make a lot of them in practically no time which is good if you have a big appetite or plan on having a few people over.


Heres all the things you'll need:

Potatoes (I went with 3 to give me 6 halves but you can add more if you want)

Sour Cream (about 3 tablespoons per full potato) Shredded Cheddar ( about 1 tablespoon per half potato)

Bacon (Make a bunch cut some up into tiny pieces enjoy the other strips while waiting for the potatoes to cook)

Butter (about 2 tablespoons per full potato)

salt and pepper (to taste, I usually use a healthy pinch)

Paprika ( about 1 teaspoon per half )


These measurements are just rough guidelines, as you can see I don't measure anything and it all turns out just fine. so have fun with it.


Method:

The potatoes went on at 300 for about 1 hour and 30 minutes if you forget to poke holes in the potato like I did on a few they may take slightly longer. Once they are tender (you can check by squeezing them and if they feel like they are beginning to squish they are done. You can also use a skewer to probe and if it glides with no resistance they are done.) you will then cut them in half the long way and scoop out the middle. Add in the ingredients (sour cream, butter, salt, pepper, and bacon) and mix around. once mixed scoop them back into your potato halves. add on some more bacon and the cheese and return to the smoker. Wait until the cheese has melted (about 10- 15 minutes) then pull. Sprinkle on the paprika and sever hot! Enjoy your Super Bowl Weekend and these delicious skins!
